Taste of Mexico: Tongue Tacos

The smell and taste are the senses that can take you immediately to specific places, moments and people. For some people may seem disgusting and disqualified, for me, one of the most beautiful memories of my childhood: tongue tacos. More specifically, I ““Tacos ton fello“In the Koogan market on Hikuwera Street.
When I was three or four, my parents would sit on me at the Taco Counter, and I would happily swallow three or four tongue tacos. They pour my soda in a glass bottle in a small plastic bag (yes, it is 90s), which made me very happy.

After I finish my tacos, my parents will take me to buy small toys or trincots. The most insignificant moment, eating tacos and taking a walk is a wonderful moment for me.
Yes, we eat the head.
As a country, we faced many crises and learned to use each animal fully to the harvest. Eating beef heads is a long -term tradition that has developed over time. From the 17th to the 19th century, most of the beef was consumed in dry forms such as Dasajo or Cicina. The rest – the hips, the ribs, the elements and the head – were cooked Barbagova or other bombs. The 19th century recipes for beef head barbaco are common in many Mexican Recipes from that era.
According to locals from Jalisco, in 1936, two men installed the first Taco Stand at Jalisco’s Arandas and sold head Tacos. I fully trust this claim. My only proof is that Jalisco, the founder of “Tacos Don Fello” in Coyan, knows what they are doing.
Don’t worry, this is not Indiana Jones.
No one is going to open a tray and reveal the open monkey head. What you see is tortilla filled with meat. The type of filling depends on your choice: the brain, the tongue, the chin and the tacos made of the eye. They are boiled and covered with plastic wrap to protect their system. When the tacoro plastic is spreading, the aroma is incredibly. He takes two tortillas, hot with the meat, holds the meat you have chosen, puts it on a very old cutting board, finely cut it, scoop it, and put it on your plate. It is like poetry. Finally, spraying coriander, some onion and salsa complete the taco.
A challenge to you
I understand that Koogan may be far from you, and if you are not in Mexico, it is very challenging to find beef heads (or even tortillas). However, here is a simple recipe that uses one of the easiest and very soft areas of the head: the tongue.
Tagos of the tongue:
Items:
• 1 cleaning beef tongue
• Salt for the taste
• 1/2 onion
• 2 bay leaves
• 2 garlic cloves
• 1 kg (2.2 pound) Domatillos, cooked
• Coriander 15 sprigs, washed
• 3–5 Cerano Chilis
• 1 small cloves
• Salt for the taste
• 1 kg of corn tortillas
• 1 onion, chopped
• 1/2 bunch of coriander, chopped
The process of the product
- Cook the tongue: Place the tongue, salt, half onion, bay leaves and two garlic cloves in a large pot. Cover in water for about an hour for every 500 g (1.1 lbs) and cook over medium heat.
- Chop the cooked tongue: Once cooked, remove the tongue from the pot and let it cool until it is handled. Peel the outer skin and cut the tongue into cubes or thin slices.
- Create Salsa: When the tongue is cooked, boil until the tomatillos are soft until they explode. Mix the tomatillos with coriander, a Cerano Chile, a garlic clove and salt.
- Enjoy together: Steam the tortillas, fill them with chopped tongue, taste the slica, sliced onion and extra cilantro.
- Enjoy it.
I understand that amcos and tongue Tacos is not easy to try. Exit out of our comfort zone would be a real challenge. However, if someone does not dare to choose a prickly pear, his previous people would not have survived the previous people, and Mexico may seem very different today.
If my grandparents did not introduce me to Adol de Koskara – a cocoa drink similar to raw petroleum – I don’t know that this is the most liked for me. Likewise, if my parents did not give me tongue taco when I was three or four, it would not be one of my favorite tacos today. So, take the risk of that first bite. You can find your favorite new flavor. Finally, when one introduces new flavors to one, you can create a beautiful and durable memory for them.
