But all of these things appear together in jaggery, which is not even necessary. This is because all these things are only in jaggery when jaggery is made from good cane juice.
Take great care when doing jaggery. If so many things are ignored when preparing, nothing is achieved from the jaggery except one or two things. Punjab Agriculture University (PAU) professionals said the quality of jaggery depends on how sugarcane juice collected.
Before making jaggery, check the quality of the cane from the meter
Professor Dr Mahesh said that the sugar cane field should be started for jaggery. For example, jaggery does not require a low cooked cane crop or cooked mostly. To learn, it comes in the market of bricks from any one thousand to 12 hundred rupees. Place a few drops of cane juice in this meter. As soon as you add the juice, you will see the sky and white in the meter. In addition, if the value of the meter juice is 20 or more, understand that this cane juice is best for jaggery. Another unique thing is that when you bring the cane from the field, do not place it in the open, i.e. in the sun. For this reason, two percent of the cane is lost from the cane every hour. It is harmful for jaggery. Therefore, it is advisable to use a cane brought from the field to make the juice within 24 hours of cutting.
Check the juice before cooking
Dr Mahesh said that after taking the cane juice, the sucrose in it should not be allowed as glucose and flocies. Alum can also be used for this. For this, the PH can also be tested from the meter. The pH value of the juice should be from 6.4 to 6.8. It is also necessary to know if the juice is completely cooked. However, so far people will find it with their own style. But this method is not correct. There are many types of meters in the market now. Know that the temperature of the meter ripe juice is 114 degrees, and that the juice is completely ready to make jaggery. Keep in mind that the temperature of the juice for sugar is 121 degrees.
